To celebrate Food Waste Action Week, we have pulled together some of our favourite leftover recipes!

Around 40% of the rubbish in an average West Sussex waste bin is made up from food waste. Most of this is avoidable and 70% could have been eaten at some point.  

  • A great way to use leftover coffee grounds for a rich and flavourful treat! 

    Ingredients: 

    • 175g butter 
    • 175g dark chocolate 
    • 3 large eggs 
    • 175g caster sugar 
    • 175g plain flour 
    • 1 teaspoon baking powder 
    • 1/2 teaspoon salt 
    • 1/4 cup instant coffee grounds 

    Method: 

    1. Preheat your oven to 180°C (350°F) and line a square baking tin. 
    2. Melt the butter and chocolate together in a bowl over a saucepan of simmering water. Stir until smooth. 
    3. Beat the eggs and sugar together until light and fluffy. 
    4. Gradually add the dry ingredients (flour, baking powder, salt) to the wet mixture, alternating with the melted chocolate mixture. Mix until combined. 
    5. Stir in the coffee grounds. 
    6. Pour the batter into the prepared tin and bake for 25 to 30 minutes, or until a toothpick inserted into the centre comes out clean. 
    7. Let cool completely before cutting into squares. Store in an airtight container. 
  • A delicious way to use up carrot peelings and reduce food waste. 

    Ingredients: 

    • 15g coriander (chopped) 
    • 500g carrot peelings 
    • 250g self-raising flour 
    • 10g ground cumin 
    • 10g ground coriander 
    • 10g turmeric 
    • 10g fennel seeds 
    • 1/2 teaspoon table salt 
    • 500ml water 
    • Oil for deep frying 

    Method: 

    1. Add the spices, flour, salt, and coriander to a mixing bowl and mix well. 
    2. Gradually add the water, stirring until you have a thick batter. 
    3. Toss the carrot peelings in the batter until well coated. 
    4. Shape into small bhajis (makes about 20). 
    5. Carefully lower the bhajis into hot oil and fry for 3 to 4 minutes until golden, turning occasionally. 
    6. Remove from the oil, drain and enjoy! 
  • A creative way to transform banana peels into a tasty, smoky snack. 

    Ingredients: 

    • Skin from 1 ripe banana 
    • 22ml dark soy sauce 
    • 2g garlic powder 
    • 7g maple-flavoured syrup 
    • 2g paprika 
    • 1 tablespoon vegetable oil 

    Method: 

    1. Tear the banana skin into 4 strips and scrape off the inner white part. 
    2. Mix the soy sauce, maple syrup, smoked paprika, and garlic powder to make a marinade. 
    3. Add the banana peels and toss to coat. Marinate for at least 10 minutes. 
    4. Heat oil in a frying pan over medium heat. Add the peels and fry for 2 to 3 minutes per side until golden and slightly crispy. 
    5. Drain on paper towels and enjoy!
